What is a good recipe for split chicken breasts?
I'd like to make split chicken breasts with kraft barbecue sauce, but I am not sure what temp to cook them at or how long. They are rather large with a lot of meat on them. I'd welcome any good answers!
Answers: I'd roast them in the oven at 375 F, either until your meat thermometer reads 180 F or until the juices run clear. It's hard to say how long, it depends on the size of the meat, and how well your particular oven works. I would marinate them in 1/3 of the sauce for at least an hour (before you cook them), and then cover them with the other 2/3 just after you take them out of the oven. This way you get a bit of the flavor in the meat, but it doesn't all burn off during cooking.

Cover and bake at 350F for at least 25 minutes. Ater 25 minutes uncover and check to see if they are done. If so, remove cover, add BBQ sauce and continue to bake for another 10-15 minutes, OR remove cover, add BBQ sauce and slide back into oven with temp off for 10-15 minutes. my boss did this recipie the other day for a party she did for us and it was so good....you may have to just divide the recipie in half but i am sure the chicken breasts would work ok
Chicken Marbella
From the Silver Palate Cookbook
4 chickens, 2 1/2 lb. each, quartered
1 head of garlic, pureed
1/4 c dried oregano
salt and pepper to taste
1/2 c red wine vinegar
1/2 c olive oil
1 c pitted prunes
1/2 c Spanish green olives
1/2 c capers with a bit of juice
6 bay leaves
1 c brown sugar
1 c white wine
1/4 c chopped parsley
Combine all ingredients except brown sugar and white wine, and marinate overnight.
Arrange chicken in pan, spoon marinade over, and sprinkle with brown sugar and wine.
Bake 50-60 min at 350 degrees, basting often.
Eat! (Serves 10+, or the leftovers make great chicken salad and sandwiches.)
Enjoy You can grill them with lemon-pepper. Or bake them in a cream soup (mushroom?) and rice. Keep an eye on the bones. When they turn black, the chicken is done. You will also start to see the meat on the breast split. That is another sign they are done.
Enjoy. Lay breast on cutting board, pull off skin, fling it away. Take a small axe and hit the meat to split it. Put enough in baking dish for you and me, pour a whole bottle of bar-b-que sauce on it. Cook for 1 hour at 350* in lower part of oven.
Cook a baked potatoe at the same time.
Fix some veg's on top of stove.
Get out the paper towells and call me. low heat... drain liquid at 1/2 way cooking point... add your bar-b-q sauce and increase heat... place cooking dish closest to the door of your oven... ( heat is most intense in the rear of oven )
