Queso Dip...?!

Question:

Queso Dip...?

I used to have a recipe for queso dip that included; Valveeta, jalapenos, rotel, ground beef, and i think maybe that was it. I really enjoyed that recipe but cant find it, does anyone have a similar recipe?

Answers: Here is what I have:

1 block of velveeta (cut into 1/2 in cubes)
1/2 cup milk (to thin if too thick)
1 can of Rotel (any flavor, however spicy you like)
1 lb of breakfast sausage (crumbled, browned, and drained) or you could 1 lb ground beef (crumbled, browned,a nd drained)
jalpenos to taste ( I don't use them because I just buy the extra spicy Rotel)

If you do it in crockpot throw all the ingredients together except milk, on high in crock pot. Once the cheese melts lower the temperature to warm and if it is too thick. Add milk until it is at desired consistency.
Or melt the cheese in microwave according to instructions then mix everything else in and microwave for a few mintues to warm other ingredients. i use velveeta, a can of chili (no beans), and jalapenos (to taste). One of our favorites.....Velveeta, pork sausage, and one can of Rotelle. Cook the sausage, drain the grease, then add the cheese & Rotelle, stir until melted then dip away with some Resteraunt style tortilla chips......Yummmmmm! More dip recipes below.
INGREDIENTS:
2 cans Rotel tomatoes
2 cans green chilis (4 ounces each)
l lb. of Velveeta cheese
1 1/2 pounds of lean ground beef or chuck
1 can mushrooms, drained (any size can to suit your taste)
1 package of Boil in Bag rice, cooked
1 can whole kernel corn, drained (1 to 1 1/2 cup corn kernels)
PREPARATION:
Brown ground chuck. Melt cheese and add Rotel tomatoes (drained) and the green chilis (undrained). Add to this cheese dip mixture, the ground chuck (drained), mushrooms, corn and the package of rice. Keep warm.

I am sure you can anything else that you like...several people have added sausage instead of beef, onion, bell pepper, etc. Well, I have a more economic queso dip.

Use Cheddar Cheese Soup
1 Tablespoon flour
Rotel
Roast Beef browned with garlic I have made some with
Velveeta
browned crumbled sausage
can of mild chilis (guess jalape?os for those with cast iron bellies)
1/2 jar salsa.
Microw. the Velveeta until melts a bit then add the rest and nuke it till all melted.

My other most popular dip:

*Spread softened cream cheese (1 & 1/2 8 oz packs) on bottom of 9x13 pan.
*top with 1 lb browned ground beef (after you mix meat with 1/3 c. bread crumbs, 1/4 c. milk, 1 egg, salt pepper and 1 T chili powder and then brown it)
*top that then with 1 jar salsa
*top the very top with 1 pk of Colby/Monterey jack shredded cheese.
* Put pan in 350 oven uncovered for 25 --35 min--until cheese on top melts.
Great with Tostido scoops. Trust me from personal experience on this one as girlnamedmaria makes the best that there has ever been and I'm not just saying that either.
