INGREDIENTS
1 (15 ounce) can butter beans, drained
1 small onion, chopped
1 tablespoon finely chopped jalapeno pepper
6 saltine crackers, crushed
1 egg, beaten
1/2 cup shredded Cheddar cheese
1/4 teaspoon garlic powder
salt and pepper to taste
1/4 cup vegetable oil


DIRECTIONS
In a medium bowl, mash butter beans. Mix in onion, jalapeno pepper, crushed crackers, egg, cheese, garlic powder, salt, and pepper. Divide into 4 equal parts, and shape into patties.
Heat oil in a large skillet over medium-high heat; use more or less oil to reach 1/4 inch in depth. Fry patties until golden, about 5 minutes on each side.

The vegetarian recipe is: boil them until they get soft. Not eating meat makes a good butterbean recipe a little more difficult, but I think it could be done.

If you are starting w/dried beans, pick thru them and make sure there aren't any rocks or other things you don't want to bite into. Soak the beans in PLENTY of water overnight and DISCARD the water. Rinse them.
Saute a little chopped onion and garlic in the bottom of a large pan. Put the beans in the pan, and add enough water or veggie stock to cover them completely.Add any herbs you think sound good, Marjoram or thyme or savory are good ones. Bring to a boil and lower to a simmer and cook until soft all the way thru. This is take at least a couple of hours. If you do it in a crock pot, leave them 8-12 hours. (and if I do it that way, I still put them on the stove to evaporate some of the water and thicken things up a bit before we eat them)
If you do this with fresh or frozen butter beans it will only take about an hour to cook. But once you get that consistency of soupy beany yumminess, add a few drops of liquid smoke and a pat of butter or swirl of olive oil for richness.
Enjoy. I just cook butter beans and eat them with corn bread. Man you can't beat that!!!
