if i use oil instead of butter do i use half a cup, or do i change the amount your cake will be different because the butter adds fat which keeps the cake moist and if used in a creamed cake recipe it also adds air to the cake making it light and fluffy. Sometimes people decrease the fat and replace with applesauce but there is still some fat in the recipe. If you don't have butter or margarine maybe you can use another recipe that calls for vegetable oil instead. Source(s):
Culinary school. No..........you could substitute apple sauce, but your cake will have a totally different texture and consistency.
The only other substitute that will produce the same texture and consistency is oil....canola or vegetable. The prior response is good, you can also use mayo. Substituting oil isn't a good idea; it's texture is too different. I use shortening; it produces a much fluffier cake anyway. Don't leave it out entirely, the recipe needs some kind of fat to work.
