Top Secret Recipes by Todd Wilbur is real good--he has some good cook books out also http://copycat.cdkitchen.com/newrecipes.... Before you get into trying these recipes you need to know that a lot of authentic restaurant recipes will only work with commercial heat and that all restaurant recipes will assume that you know how to cook professionally.` The end result is that a restaurant recipe will take those 30 little steps you see in a home recipe and reduce it to about four big steps.
