looking for a good recipe for my leftover cod and potatoes prefer fish cakes.


Answers: Ingredients:

2 cups codfish, cooked and flaked (salt fish is best)
3 cups mashed potatoes
2 tsp. finely chopped onion
salt to taste (if fresh fish is used)
1 egg

Directions:
If salt fish is used, soak overnight. Cover with fresh cold water and bring to boil for 20 minutes.

Flake the cooked fish.

Blend flaked fish, mashed potatoes, onion and egg together, Add salt, if necessary, also sprinkle of salt.

Form into patties and dust with flour.

On hot frying pan, cook until golden brown on both sides You don't really need a recipe. All you need is the willpower to be creative with it.

Take that cod and potatoes and chop them up in fine pieces, does not even matter if you do it together. Add them to a bowl and blend in a beaten egg. You can add chopped onion and celery, bell pepper if you like. Salt and pepper to taste and add Bread crumbs (I like the Italian flavor bread crumbs with Parmesan Cheese). Blend together enough to be able to make patties out of them.

Stove top fry them in a little bit of oil until golden brown ion each side.

Same as salmon patties except you have potatoes in with it. * 2 large potato, peeled and halved
* 1 tablespoon butter, melted
* 1 tablespoon grated onion
* 1 tablespoon chopped fresh parsley
* 1 egg lightly beaten
* 2 tbsp eschalots (finely chopped)
* 1 lb, salted cod fish, cooked and flaked
* 1 large fresh hot pepper ( finely chopped)
* 3 tablespoons oil for frying

1. Place the potatoes in a large pot of water, bring the water to a boil. Let the potatoes cook until they are almost tender.

2. Add the fish to the pot and let the fish and potatoes cook until they are both soft. Drain well and transfer the potatoes and fish to a large mixing bowl.

3. Add butter, onion, parsley, eschalots and egg to the bowl; mash the mixture together. Mold the mixture into patties.

4. Heat oil in a large skillet over a medium-high heat. Fry the patties on both sides until golden brown. Drain on paper towels before serving.
