Why do egg yolks change colour when they are overcooked by boiling?


Why do egg yolks change colour when they are overcooked by boiling them, but stay yellow when they are overcooked by frying?


Answers: Because they contain sulphur which, when too much heat is applied changes colour. This doesnt happen so much with fried eggs because the sulpher can evapourate. Sulphur also causes the smell with bad eggs.
