Ideas for office lunch (can't heat or cook on site)?
My husband has to bring lunch for 14 (they take turns each month). Any suggestions for something simple that would be vegetarian-friendly? They have no facilities for cooking anything, a small microwave, though. Also he commutes by train so he can't haul in a crock pot or anything like that. Thanks!
Answers: Pasta salad using EVOO and Balsamic vinegar as the dressing.
Toss a firm, cooked al dente pasta like rigatoni with small broccoli spears, feta cheese (salty so it won't spoil), olives, tomatoes, etc., whatever is available in the fridge.
Put the pasta in a large ziploc bag, put the bag, some small paper plates, napkins, & plastic forks in a large plastic bowl. Add a box of Ritz or Club crackers and travel set of salt & pepper shakers. Stuff all into a grocery bag and your on your way. When he gets to the office he can put the pasta salad into the bowl. Any leftovers can go back home in the bag.
It's cheap, good, suits all tastes, and travels/keeps well! Why, talk about limitations.
A big bowl of salad? Some kind of Asian wraps? They could be put in a cooler bag for the trip. snadwiches and tuna These are easy to make, easy to transport and oh so good.
You may need to double the recipe to have enough.
I refrigerate my dough to it is easier to work with while I'm making the filling. then roll dough after filling is done. In steps 1-3 you are just making a dough like pie crust, the good think is you don't have to be so careful with the water, if you need more just keep adding it a few sprinkles at a time, more flour also.
Trust me if you've never had a beef pattie, they are sooo good. We include a hot pepper ( not jalapeno) in ours when we make them, to spice them up a bit. and also add curry to the meat filling. The idea is to season the meat really well so that it still tastes over the crust.
You do not have to use hamburger, we use tuna, tinned corned beef, left over pork poast, almost anything will go well with them. I often sub, the bread and use mashed potatoes instead. I guess what I'm saying is this is a hard recipe to mess up as long as you can roll a circle of dough.

Hope you enjoy. Cook a large roast in the crockpot with a jar of pepperocini peppers (sliced) for 4 hours on HIGH or 8 hours on LOW. Roast should be falling apart tender---shred with a fork.
Add your favorite barbeque sauce. Serve on hamburger buns or submarine sandwich buns.
Easy to transport and can be reheated in a microwave easily. *mac & cheese
*chicken salad - boil chicken shred it, add cooked carrots, corn, peas, potatoes, with mayo, pepper. serves cold. Lasagna..........even when eaten cold its still yummy
