Tonights healthy eating recipie - Salmon Ricecakes - All my own creation, what do you guys think?


Take a fresh salmon fillet and steam-cook it, then flake it into a mixing bowl.
Boil up some rice with a sprinkling of dessciated coconut through it. Make the rice nice and sticky. Now add this to the salmon in the bowl.
Finely chop half a red onion, a small red pepper, and a garlic clove, then add them all to the mixture in the bowl.
Add one egg to act as a binding agent.
grind over some black pepper, and add some nice sea salt flakes, and mix the contents of the bowl together.

Now sprinkle flour on the worksurface, take your mixture, and work it into burger sized patties, which are covered in flour.
Place these on a plate, and put them in the fridge for an hour or two until they go nice and firm.

After an hour or two, take them from the fridge, and warm up a griddle <i>(I plan to use a george foreman grill)</i>, and cook them through.

Serve up on a plate with a nice fresh salad.

Would you eat this if it was presented to you?

The reason I didn't include lemon in the mixture was because I'll be garnishing it up with a twsited slice of lemon on top and some freshly squeezed lemon juice drizzled over it.

It is healthy because it's all fresh.

Sounds quite good, I'd serve it with a Thai green veg curry to give it a bit of sauce though. sounds lovely be round later I'm having a kebab and two bottles of wine! Sorry...UGH!!

I would think Salmon marinade in a olive oil,garlic, shallots, brown sugar and soy sauce based marinade would be tastier when grilled and served with brown wild rice and Greek salad on the side. Sorry. I don't think you've made a healthy choice. Flour, white rice, egg.. none of which are terribly healthy. I think you might be spoiling good salmon by mushing/flaking it up and mixing it with so much. I prefer salmon grilled (on the grill) or broiled inside. I try to buy pacific wild salmon when I can. I have had salmon patties that were wonderful, but they weren't filled with rice.... mostly salmon with a little bread crumbs (I'd use whole wheat). I know you're trying, but all that sticky rice mixed in with salmon doesn't sound appealing to me. Hopefully you're going for more than one night eating healthy. I love to cook, but keep it healthy every day. And believe me... I don't compromise flavor to keep it healthy. Sounds nice, not sure about the coconut though. I've used rice instead of potatoes, with tuna, to make fishcakes but your recipe would make a nice change (minus the coconut- sorry). And yes, healthy, too.
