I am going to be making a pumpkin bread. I already have the recipe. I just want to use raw pumpkin instead of out of a can. Thank you all for your methods. These directions are for a medium sized pie or sugar pumkin:
Preheat oven to 300 degrees F.
Cut pumpkin into small manageable pieces and cut off stem and seeds.
Place cut pumpkin skin side up in a large roasting pan. Add 1/4 water and bake uncovered for 1 hour or until tender. Remove from oven and allow pumpkin to cool.
When cooled, cut away skin and mash or puree if desired. Use in any recipe that calls for canned pureed pumpkin. Source(s):

OOPs what are you making,,?
PIE...??? clean out the seeds cut in manageable pieces and roast meat side down in a pan in a 350 oven for about 30 minutes
this will remove excess liquid.
Once roasted remove rind and use accordingly for any recipe Small pumpkins can be baked whole, in which case you need only cut a circle around the stem, making a lid, and scoop out the seeds and pulp.
Pumpkins to be boiled should be cut into 2-3 inch chunks. Place pumpkin, water, and salt in large saucepan. Cover. Boil for 25-30 minutes, until fork tender. Drain off water.
