Answers: Milk as it comes form the cow is roughly 5% butterfat content.
If you let unhomogenized Cow's milk sit undisturbed, the cream rises. Milk is homogenized to keep the cream from rising to the top. We homogenize milk by shaking it really hard in a machine to break up the fat molecules, this keeps it from sepparating.

If we want less than 4% (aka 'whole' milk), the milk is put through a 'cream sepperator'. This is a type of machine that whirls around and makes more cream (butterfat) rise to the top.

When the desired amount of fat is removed, you have skim (usually 3% fat), 2% fat, 1% fat, and fat-free milk.

With the exception of the fat-soluble vitamins, most of the nutrition is in the rest of the milk.

Evaporated milk is either skim, or lower-fat milk (depending on the label) where allmost all the water has been removed. Because the water is mostly gone, it is lighter to transport and is less likely to spoil . It is in a can.

Sweetened condensed milk is just that; evaporated milk that has had sweeteners (and usually other stuff) added.

If you have a recipe calling for sweeneded condensed milk, try this; it gives a fresher taste to the recipe and is much cheaper:

In a Blender or food processor, put:
1 cup dry powedered milk
2/3 cup sugar
3 tablespoons real unsalted butter. DO NOT USE MARGERINE
1/3 cup boiling water

Mix at high speed till smooth. Be careful because it is hot; wait till cool before using in a recipe with eggs in it.

it is fat free milk. It looks like watery milk. Because it has little fat or no fat we have learned to drink it.

sweetened condensed milk, I don't know, but I know it is used in some desserts.

evaporated milk, I don't know. Sorry but that replacement condensed milk idea, just above, sounds awful! Proper condensed milk should only have milk and sugar in it. No corn syrup, no sweeteners, NOTHING apart from milk and sugar. And it's lovely! It's milk that's been reduced right down, like evaporated milk only much more so, and then sugar added. There are some fabby recipes using it.
