How do I cook chicken to add to a pureed vegetable soup?
I want to add chicken to my vegetable soup I pureed but am not sure how to cook it. I added celery, onions, and carrots with a few pinchs of salt and added chicken stock. How should I cook the chicken? and the soup was a bit salty, how can I fix this?
Answers: I would either bake the chicken, then dice it or dice it first and saute it in a little butter or olive oil.
You can reduce the salt a little bit by cutting up a couple of potatoes into fairly large pieces and cooking them in the soup until not quite done, then remove them and discard them. That will absorb some of the salt (and other seasonings!) so taste and adjust seasoning if necessary.
Bert You can cut up the chicken (boneless skinless breast) and poach it right in the soup. If the chicken has bones, either roast it or boil it in another pot. Easy, simply poach it. Cut it into parts and simmer it very slowly in water with a bay leaf, a celery stalk, a little chopped onion and garlic for 1/2 hour, let it cool and shred or chop up the meat. You can add the cooking stock to the soup.
Add to your pureed veggie soup and cook for two more minutes!

. To give your soup more robust flavor, grill or bake the chicken after you marinade it. Then cut it up and simmer it in your soup for at least 1/2 hour to let the flavors meld.
To reduce the saltiness, either add a wee bit of sugar, or, in a pureed soup like yours, add some instant potato flakes. That will keep with the consistency of your soup and will soak up the salt.
