Answers: Mix into oatmeal with some pumpkin pie spice, or some cinnamon and/or nutmeg, and some cloves if you have it. That does not sound yummy at all. I'd use it to make a small batch of pumpkin muffins. make some muffins to the one cup of pumpkin add about 2 tablespoons apple juice 1 teaspoon sugar 1/8 teaspoon cinnamon 1/8 teaspoon nutmeg pinch of ginger pinch of ground clove

place any left overs in a jar or plastic container and refrigerate will keep about 2-4 weeks depending on how cool it is kept (do not freeze) heat it up on the stove with some butter and brown sugar . . . eat it warm like pudding! 1 can (15 oz.) LIBBY'S? 100% Pure Pumpkin, chilled
1 can (12 fl. oz.) NESTLé? CARNATION? Evaporated Lowfat 2% Milk, chilled
1 1/2 cups orange juice
1 small sliced banana
1/3 cup packed light brown sugar
2 dozen ice cubes (optional)
2 teaspoons ground cinnamon (optional)
Directions:
PLACE pumpkin, evaporated milk, orange juice, banana and sugar in blender; cover. Blend until smooth. Pour over ice. Sprinkle with cinnamon, if desired. Make a bread.Just use 1 1/2 cups Bisquick,1/2 cup sugar,pumpkin,1 egg,and water (only enough to mix well).Then bake at 350 for 35 mins are til done.Then remove and drizzle some powder sugar and water mixed up on top of it..Good and easy. You cold make pumpkin soup. Or you can make a stewed chicken with pumpkin as the thickener and spice.
I cant find a recipe for it, but it is a tasty dish.
Boil cut up chicken parts in the smallest amount of water you can to get a good broth.
Chop an onion, celery, garlic into it. add a can of pigeon peas if you can find them.
When chicken is done. add the pumpkin, some brown sugar 1 TBL(not to much or it will get to sweet). cumin, cilantro, a bit of al-spice, a bit of ketchup 1/4 cup or about a half can of stewed tomatoes, Stew until all ingredients mingle.
Add a hot pepper (chilis or scotch bonnets would be best) to kick it up a bit.
I wish I could give you exacts but I just make it. Mix it with 1 1/2 cups softened cream cheese add 1 tsp. vanilla extract and 1/2 tsp pumpkin pie spice (or a combo of cinnamon/nutmeg/clove) blend well- serve as pumpkin pie dip with ginger snaps, apples and mini cinnamon graham crackers! Those other suggestions sound good, but if you have a dog, you could add some pumpkin to his food. Pumpkin is a great supplement for dogs because of the vitamins and fiber. Just a bit will do.
