Thinking about starting my Christmas cake.?


Is it too early to soak the fruit in rum for a couple of months? Will it go off or will the rum preserve it? Thanks guys!

Thanks blue badger. Suppose a couple of months is a long time! Just want the fruit to really soak it up tho. i would agree, start making the cake soon and then keep it in a tin... you could then drizzle over some brandy once a week and by christmas.... mmmmmmmm!

P.S

Don't ice the cake until nearer xmas as icing will go stale quicker than the cake. Soak the fruit in rum for a couple of months? Overnight would be good, then feed rum into the cake gradually. the rum will preserve it, i would soak it for a couple of weeks, then make the cake, then store in airtight tin in a cool place. Fruit cake can be stored for a year or so
