every week we take turns watching football at each others house. tommorow is my day. we have done chicken wings, tacos, sloppy joes. I don't know what to make tommorow, something light, and INEXPENSIVE, that goes along way.
Answers: I agree with "just me". I think chili is a great idea! Get some hot dogs and buns and cheese, too and people can make their own chili cheese dogs.
That sounds good ... what time should I be there? :-) How about chili? Saghetti bolognese, it's a sure fire winner. Make the bolognese before everyone comes around, then it's just a case of reheating and whacking on the pasta for a few mins. May I recommend a sprinkling of parmesan and some garlic bread on the side! Red beans and rice with smoked sausage. I agree that chili is a good choice, but you might also consider a baked pasta dish like ziti. It goes a long way.
Go ahead and make all of this. If you have leftovers, they always taste better anyway!
Do this the day before your party:
2 pounds ground meat - 1 pound gr. turkey and 1/2 each of pork and beef (to keep cholesterol down)
large jar tomato sauce of your choice and a large can of diced tomatoes
2 pounds ziti or penne pasta
cook pasta for 7 minutes exactly and drain and rinse under cold water to stop cooking
In a large skillet, brown meat with an onion and some fresh garlic. turn off heat and let cool slightly
pour about a cup of tomato sauce in bottom of a large baking dish. Add about 1/3 of the pasta and top with 1/3 the meat mixture and half the can of tomatoes. Repeat layers and end with the last of the sauce on top.
cover tightly with foil and bake at 350 for 30 minutes.
Remove and cool. Refrigerate over night
1-1/2 hours before the game, put the ziti in the oven again without taking off the foil. Bake at 350 for 45 minutes to get back up to temperature.
Cover the top with shredded cheese you like ( I use 5 cheese Italian Blend). If you want to go with fresh cheese, then get a 1/4 pound of provolone at the deli and get some fresh mozzarella, Asiago and Parmesan and Pecorino Romano. Grate and/or shred the cheeses and mix together before spreading over the top.
Return to oven at 350 for about 10 minutes or until cheese is lightly browned and bubbly.
Serve this with garlic bread at half time and enjoy!
To help with the food bill, ask your friends to each bring some kind of potato chips, corn chips or pretzels, etc. and do a couple of the following recipes to serve during the game:
1. Get cocktail rye bread, 1 pound of corned beef, a small can of sauerkraut, 1/4 pound of swiss cheese and a jar of 1000 Island dressing. Cut meat and cheese into small pieces and mix all the ingredients except the bread in a bowl. Spoon some of the meat mixture onto each piece of bread and place on a cookie sheet in batches. Bake for 15 minutes at 400 degrees to make mini reubens.
2. Put tomato sauce, Shredded mozzarella and sliced pepeproni on bagels and bake at 400 for 10 minutes for mini pizzas.
3. Mix a package of vegetable soup and dip mix with a package frozen spinach that has been thawed and drained (put into paper towels also and really squeeze the liquid out) and an 8 oz sour cream with a package of onion flavored cream cheese. Cut the top 3rd off a round loaf of bread and dig out the bread to make a shell. Fill the shell with the cream cheese mixture and bake at 350 for 20 minutes or so. Serve with bread squares for dipping or put out crackers and spreaders.
3.Make a big bowl of Peanuts and raisins
4. Get some small beef or smokey hotdogs and your favorite barbeque sauce. Pour barbeque sauce into saucepan and add a jull jar of water. Add the hotdogs and turn the heat on medium. After they come to a boil, turn to very low for a couple hours. The sauce thickens and the hotdogs become logged with the flavors. You may even use some beer to clean out the barbeque sauce jar and make this really taste good. A dark ale or dos eches Mexican beer are really good for this.
5. Get some mini egg rolls and a small jar of duck sauce (or use the little packets that come with chinese takeout!). Cook according to directions and serve the sauce on the side for dipping. I sometimes get a mixture of different eggrolls for variety and they go fast!
6. Get a couple Polish Kielbasas and a wedge of baby swiss and a jar of spicey brown mustard. Cut the meat and cheese into cubes and put a small bowl of the mustard in the middle. Provide toothpicks for grabbing them and a make sure there's a small garbage recepticle close by for used toothpicks.
Last, buy a few bags of tortilla chips and a large jar of salsa and a package of shredded Mexican blend cheese. Pour the salsa on top of chips and cheese on top and bake at 350 for 20 minutes for Nachos.
Serve ice cold beer and sodas to make this a very memorable get together. Have piles of cocktail napkins around the room. For garbage cans, get a few small boxes at the supermarket and wrap them with newspaper or construction paper the colors of the teams playing and place them strategically around the room so people don't have to search for a place to throw away napkins or toothpicks. Buy your pickles & olives at Dallor General if u have one close. Chili and Fritos.... Frito Pies! i was going to suggest chili also (dont forget the grated chesse for the top), but i will add a few more ideas:
-build your own subs....1-3 kinds cold meat, cheese slices, lettuce, tomatoes, black olives, any kind of pickles, mayo, mustard, italian dressing....whatever you have around or can buy
-or pre-made assorted sandwiches cut in halves or quarters on a platter.. maybe 2 or 3 different kinds, then your guests can pick and choose a variety...whatever meats you want but dont forget tuna and salmon or canned meats can be inexpensive to, or egg salad sandwiches
either of those ideas can be accompanied by a potato salad, pasta salad , bean salad or lettuce salad or even a platter of raw veggies and dip. celery, carrots, radish, peppers go a long way
-mini pizzas, or pogos on a stick, or hotdogs served with french fries and or potato chips make your own fries if possible to cut costs. even better...can you make your own pizza dough and your own pizza?
- spaghetti could really go a long way too. grated cheese or parmasean cheese and garlic bread
-assorted crackers with cheese, mix up a crab dip with the imitation crab meat
-devilled eggs
-mix and match any of these ideas
good luck We've done the usual gamut of things here too and personally I get tired of always the same things. My favorite (and easiest!) is to do several choices of finger sized things. That way there's no pots, pans, bowls, plates, silverware to clean up. stuffed mushrooms, mini quiches, mini sandwiches (best way - french loaf slightly frozen, slice long way in thin slices, then put stuff in, then cut into small squares), mini s;mores, mini cakes, vienna sausages rolled in puff pastry, mini dolmathes, meat and cheese rolled into lettuce leaves. Just let your imagination go wild
