How many turkeys, how many pounds of roast beef, and potatoes do I need?
I was thinking of 6 turkeys, 60 lbs of roast beef, and 50lbs of potatoes, is that enough?
Answers: Many cookbooks have charts in the back of the book that list "Quantity Cooking" which shows how much you need of a certain menu item to cook from 25 - 100 - 200 people. According the charts in the back of my cookbooks, it suggests 10 turkeys of average weight (10 - 12 lbs), 100 lbs of roast beef and 75 lbs of potatoes to cook and serve 200 people. Figure 6 to 8 oz of meat per person, never mind the suggested portion size is 4 to 6 oz.

Do the math. I don't think that's anywhere near enough. Some people will want more potatoes or more turkey or more beef. Best that you allow at least 1/2 pound of each for each person. And you still might run out. So 100 pounds of each item - at least. And that doesn't include bones! So I'd go with 200 pounds of whole turkey. If the budget allows, getting boneless turkey breasts or turkey rolls can save on prep and waste. With the turkeys you count about one pound per person if you want to leftovers. And of course you have to consider the bones.
Go to recipezaar.com, there are people who can tell you more exactly. At least I hope so. Do you speak German? I can send you a German site, where they would be able to tell you exactly. One potato per person, a slice roast beef if they want it and 2 slices of turkey plus gravy, and dressing this tends to fill people up, a side dish would be carrots and roll too.
you might figure a cost like resturrant maybe $7.00 per person then work from that???
not including drink? water or Icedtea... Double the turkeys and potatoes. If you're asking this question of complete strangers I wouldn't' want to go near your catered event!!!!
