Why do cakes go hard .when stale..... and biscuits go soft?!

Question:

Why do cakes go hard .when stale..... and biscuits go soft?

Answers: its the sugar to wheat ratio- I read it in the Big Issue. its why Jaffa cakes went to court because its cheaper for them to sell as a cake than a biscuit-true story. dunno...but soft biscuits are disgusting!ewww... ooo that is a fantastic question!

I guess biscuits absorb moisture from the atmosphere and cakes lose it.
Why? I've no idea! You need to keep your cakes in an air tight container and your biscuits also.

Problem solved!!!

nfd? hmm...interesting. I think cakes have the rising agent in them more and they are fluffy and if the air is sucked out of them, them i assume they go hard and crumbly.
