I have tried a few things, but it never comes out that good. I have tried ginger, brown sugar, nutmeg, etc. I must be adding the wrong amounts.
Answers: add lots of maple syrup. my mom has done that for years. and I do the same thing. It is so good. honey, ginger, garklic? add maple syrup and cinnamon!!! Cinnamon, honey or brown sugar, and butter. Also, don't forget salt. Salt will bring out more flavors and make the sweet flavors taste sweeter. Cinnamon is strong and it won't take much...just a bit. I like honey, but brown sugar works as well. Tr roasting the butternut squash before your puree them. It will be sweeter that not due to the caramelize that happen when you roast. Try corn syrup and butter I boil the squash, than peel it, then mash it with either hazelnut flavored cream or vanilla flavored cream and serve it with a pat of butter and sprinkled lightly with salt. Certain cookware can alter the flavour of your food, especially if your cookware is old, aluminuim is very bitter & so is Iron and non stick wears of to expose aluminuim.
You should try Saladmaster 316 cookware then you wont need to add anything to your food because the natural suger in the squash will take over and it retain lots of it's original nutritional value. try cinnomon and sugar I cook mine in the microwave first (upside down in a dish of a little water). Then put real butter and brown sugar inside the cavity and put it under the broiler for a little bit. Scoop it out and mash. YUM!
That's how my grandma always made hers and I love it! I always roast a sweet potato along with winter squash and mash them together to smooth out the flavor and texture. I add salt, pepper, butter, and a nickle size bit of FRESH ginger that's been grated to a pulp.
Slice the winter squash and remove the seeds. Brush with a bit of olive oil and place flesh side down on a foil lined baking sheet. Roast in a hot oven for about 30 min (depending on the size of the squash). Place a whole unpeeled sweet potato along for the ride on the baking sheet.
