mostly the cilantro being used in the dish and not being used as a garnish


Answers: Lemon cilantro chicken

* 6 skinless, boneless chicken breast halves, cut into bite size pieces
* 3 large potatoes, peeled and sliced
* 1 bunch fresh cilantro, chopped
* 1 cup lemon juice
* 2 teaspoons lemon pepper
* 2 tablespoons olive oil

1. Marinate the chicken in a mixture of 1/2 cup lemon juice and 1/2 of the chopped cilantro for 1 hour.
2. Mix the rest of the chopped cilantro with the remaining lemon juice. Add the lemon pepper seasoning and 1 tablespoon olive oil. Set aside.
3. Spread 1 tablespoon olive oil into the bottom of a 9 X 12 inch glass baking pan. Layer the potatoes and the chicken in the dish. Pour lemon pepper mixture over. Cover.
4. Bake at 350 degrees F (175 degrees C) for 30 minutes. Uncover, and bake for 10 minutes more. CILANTRO CHUTNEY:

Serve over grilled meat, fish, chicken, veggies....

Yields 1 cup

Ingredients:

2 cups freshly packed cilantro leaves
2-3 small Thai green chilies, roughly chopped
2 large garlic cloves, roughly chopped
1 inch piece of ginger, peeled and roughly chopped
juice of ? a lime
water (if needed)
salt to taste

METHOD:

In a blender, blend all of the ingredients until smooth. You may need to add a little water to help the blending process. Refrigerate and use immediately. The chutney will last for 3-4 days in the refrigerator.

VARIATIONS:

You can substitute mint leaves for the cilantro leaves or use a combination of both mint and cilantro. For a slightly tart taste, add a few pieces of green apple for a refreshing twist. Guacamole Dip..( Delicious)
Take ripe avocados.
Tomato,onion,cilantro dice small,
salt,garlic powder...smash up with
fork . I use it in, pretty much anything i cook. Its one of my favorite herbs. Cilantro pesto
puree cilantro with olive oil, garlic, lemon, salt and pepper, add a jalapena for heat if you like. Its so good on fish or chicken. cilantro and pepper-jack cheese sandwich?
