2 tablespoons Myers rum
Pie shell
Separate eggs. In a clean bowl beat egg whites only until slightly foamy.
In a measuring cup, add 1 can of evaporated milk. Add regular milk until level in measuring cup reaches 1 1/2 cups total.
In a mixing bowl, combine all ingredients except egg whites. Beat one minute. Gently fold in egg whites.
Pour into pie shell.
Bake at 425°F for 10 minutes. Reduce heat to 350°F and continue baking for 30 more minutes.

REAL PUMPKIN PIE
2 c. pumpkin, cut into half-inch pieces
1/4 cup liquid from cooked pumpkin
1 c. raisins, soaked in 1/4 cup dark rum
1 c. sugar
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 teaspoon cloves
1/2 teaspoon ginger
1 tbsp. molasses
1 tbsp butter
1/2 tsp vanilla extract
1 egg yolk, beaten
This recipe uses cubes of raw pumpkin rather than canned pumpkin. Winter squash may also be used.
In medium saucepan, add 1 tbsp. of butter and 1/2 cup water to pumpkin, and simmer over medium heat, which should take approximately 10 minutes. Drain, reserving 1/4 cup liquid. Mash or puree pumpkin. Add raisins, rum, cooked pumpkin, and remaining ingredients. Stir until well combined.
Turn into pastry lined 9 in. pie plate. Flute edges. Set in preheated 400 degree oven. Bake 15 minutes. Reduce heat to 350 degrees and bake about 30 minutes longer. Use only Libby's Pumpkin, it is the only one out there that is real pumpkin.
I use: brown sugar, a little molasses, cinnamon, ginger, nutmeg, and vanilla.
Some people put in cloves, but this is only good if one were to put lots of whipped cream on it. Just mix together some cinnamon, all spice, nutmeg, and cloves!
you can also buy it in the store! i dont know if you are talking about making an entire pie...but if you don't want to make it from scratch, you can buy cans of pumpkin filling mix at the grocery store and it will tell you what else you need. its really easy and good too! ginger, cinnamon, cloves, all-spice and nutmeg....mix about 3 tsp. of each together and improvise to taste from there.... I make mine using four parts cinnamon, two parts nutmeg, two parts allspice, one part ginger and 1/2 part cloves and 1/2 part mace. All ground, of course. I usually use the same mixture for pumpkin pies and apple pies, sometimes I use half spice mixture and half cinnamon for apple pie.
