How come it can't touch metal?!

How come it can't touch metal?


I like making Amish Friendship Bread. I was given a starter by a friend and have made many variations. How come the directions say it can't touch metal? Just wondering...


Answers: Amish Friendship Bread is actualy a form of sourdough bread! Sourdough cultures are very sensitive to any metalic surfaces. Many if not most sourdough instructions or recipes do have a note not to use metal bowls, spoons, etc when preparing the dough. That is why you also want to use water that has been softened and filtered. To remove the metals in the water (iron, etc.) when you store the starter keep it in a plastic container or a glass jar with the old fashoned clip down lid, not the screw on metal lid and ring. Doing this and being carefull will ensure that you will have a starter that will last generations if properly stored, fed and used. I use plastic or glass and porcelean bowls with wooden spoons for all my preparation and Bake my bread in a Dutch oven. But, the dough does not touch the metal of the Dutch oven until I shape the loaf and let it rise for the second time just before baking.

sourdough baker for 10 years because it has a high acid level and will react to the metal. I'm not 100% certain but I think it is a religious thing, as in some faiths can't eat certain foods I thing the Amish are not allowed to bake their friendship bread in or touching metal.
