Leftover Vegetables?


I have about 3 to 4 cups of cooked vegetables leftover from a crockpot roast. White potatos, carrots, and celery pieces.

Any ideas on a good way to reuse them? They are very good and I hate to throw them out.


Answers: Oh, this happens to me alot -- and I make soup. Be sure and use the left over juice from the crockpot roast, that's good stuff. Add in a few more veggies (frozen peas, lima beans, corn, broccoli, cauliflower, etc.), a little V-8, seasonings, simmer for a bit, and you have dinner. All you need now are a few corn muffins, maybe a light dessert, and you have supper. YUM! Make a beef stew with them wrap then in biscuit dough and crisp them in olive oil Sometimes I just cut them into large bite size pieces and saute/fry them in their leftover juice. Brown them a little to get a nice crispness to them.

Or just microwave them as a side dish for another meal. toss them in a salad
put them in a bowl and eat them w/ ranch
wrap them in a tortilla
send them to my house ! jk make vegetable soup Oh, yum- how about a soup- any kind, but especially a potato soup- cook more potatoes if you need to, but add all you have now, too. Add some great northern beans and make a new meal out of it. you can freeze and store them - make a soup, or a quick stir fry Put the veggies (along with any bits of meat that might also be left) in a pie plate - make sure to put the juice on it. Pour a little gravy on top (there are instant packets available in the stores or jars), put some nice biscuits on top and bake until the biscuits are done. It makes a pretty good meal. 2 ready-made pie crusts, can of chicken breast, can of cr. chicken soup, vegetables.
"Flake" chicken with a fork. Mix soup with 1/2 can milk. Combine chicken, soup, vegetables. Pour into pie crust in pie pan. Cover with other crust. Cut slits in top for ventilation. Bake till golden brown about an hr at 350 deg.
