Fresh jalapeno?!

Fresh jalapeno?


i'm making chili today and i want to put a fresh jalapeno in it-- i've never used a fresh one before, just canned.
do i just chop it up, or are there parts you aren't supposed to use, etc?

put on a clean pair of vinyl or latex gloves.
now, when using fresh chili peppers you need to understand where the HEAT comes from. It comes from the thin white membrane that runs lengthwise on the inside of the pepper and also holds the seeds in place.
Carefully cut the pepper in half, remove the seeds,and chop or slice the pepper. If you don't want it to be too hot, remove (with your knife) the membrane or rib that runs the length of the pepper first. Do NOT touch any sensitive areas on your body (eye's,lips,nose) until you remove the gloves and wash your hands. Source(s):
I'm a chef JUST SLICE IN HALF AND TAKE THE SEEDS OUT OF 1/2 NAMASTE if you want to reduce the "heat"...you need to remove stems and seeds. You can just chop it up and put it in. Remember tho that the capsasian ( what makes it hot) is in the white membrane inside the pepper. I'd cut it in half take out the seeds and put the halves in. You can use it the following ways:
1. Roast the jalapeno over an open flame for flavor. After it is all roasted clean off the burned skin, You can take the seeds out and the white membrane inside of the jalapeno, to take the spiceyness off or just the seeds. Cut it up in small pirieces.

2. Use the jalapeno as is and clean it as indicated for spiceyness.

3. When I make chile, I usually throw in a smoked ham hock, gives it a lot of flavor, also throw in a bell pepper and cilantro.
