I'm preparing a salmon mousse from can and my guests are expected tonight. It smells a bit off. Should I..?


The canned salmon smelled a bit off and had a green/blue tinge to it. Should I try to cover up the odd smell with more shallots and tarragon, or with more lemon juice and white wine?

ugghhh. . .this stuff is making the whole house stink. i don't believe you, so my answer is yes, you should poison your guests with bad canned salmon. it will be really funny when they all vomit and have diarhea all over your carpeting and furniture. ahhh... despite what you may think, the bluish/green pieces are a delicacy in some parts of the world. make sure the guests know you are serving them the good stuff. It's canned salmon...it's supposed to be stinky. A little toning down with more herbs can't hurt, though. and Charlie,,,light a match Lemon and white wine... Get them all liquored up and NO ONE will notice a thing! :) When in doubt throw it out! Just give it a rinse then pat dry. I would go with plan B
Its not worth the risk of making them sick.
go buy some fresh salmon, they sell it everywhere, and its not that expensive. they will thank you for it. Just turn on the fan and open the window. The smell will go away eventually.

Use red food coloring so that people won't see the mold. You could mix it up with a bit of smelly cheese, something like danish blue - that way, if the salmon is off, they won't be able to tell and they'll already have eaten the penicillin they'll need for the food poisoning! Just serve it to them. When the bell rings, invite whoever it is in. Then leave quietly.
