Where can I find a chicken salad recipe like the one they have at Whole Foods? It is not mayo-y and has grapes


I am not sure if they use yogurt or something to hold it together but it is delicious and I do not like chicken salad with a lot of mayo.


Answers: It's called Sonoma Chicken salad and there is mayonnaise in it. This is the recipe off of the Whole Foods website.

Dressing
* 1 cup mayonnaise
* 4 teaspoons apple cider vinegar
* 5 teaspoons honey
* 2 teaspoons poppy seeds
* sea salt, to taste
* ground pepper, to taste


Salad
* 2 pounds boneless, skinless chicken breasts
* 3/4 cup pecan pieces, toasted
* 2 cups red seedless grapes
* 3 stalks celery, thinly sliced

Prepare the dressing by thoroughly mixing together all dressing ingredients in a bowl. Refrigerate until ready to dress the salad. (Can be prepared up to 2 days ahead.)

Preheat oven to 375°F. Place the chicken breasts in one layer in a baking dish with 1/2 cup water. Cover with foil and bake 25 minutes until completely cooked through. Remove cooked chicken breasts from baking pan, cool at room temperature for 10 minutes, then cover and refrigerate.

When the breasts are completely chilled (at least 2 hours refrigerated), dice into bite-sized pieces and transfer to a large bowl. Stir in pecans, grapes, celery and dressing. Sonoma Chicken salad- YUM.

2 1/2 c. diced cooked chicken
1 c. finely chopped celery
1 c. sm. seedless green grapes
1 c. chopped walnuts
1 tsp. minced onion
1 tsp. salt
1/2 c. whipping cream, whipped
1 c. mayonnaise
Salad greens
Garnishes: Stuffed & ripe olives, sweet pickles, parsley & julienne strips of chicken

In a bowl, combine chicken, celery, grapes, walnuts, onion and salt. Whip cream and mix it with the mayonnaise. Fold this dressing into the chicken salad mixture. Cover bowl and refrigerate for several hours. At serving time, serve salad on greens with garnishes.
