Answers: Kidney bean casserole very yummy 1 can of kidney beans, pound of ground beef, 1cup of chredded cheese,1 can of cream of mushroom soup, onion optional. brown meat and onion, in casserole dish mix beef, onions, beans and soup topped with chedder cheese and bake for 350 for a half hour.
It is also goo d with some chips. Beef stew or lasagna or baked ziti or chili or a chicken casserole. Seniors like the same foods younger people do, but some may have difficulties chewing so I keep the foods softer unless I know everyone's abilities. TUNA RICE PIE

Mix: 2 c. cooked rice 2 tbsp. butter 1 beaten egg
Butter sides and bottom of pie plate. Press mixture in bottom and sides.

Drain can tuna. Sprinkle over rice.

Mix: 1 c. grated cheese 3/4 c. milk 1/4 tsp. salt and pepper 1 tbsp. chopped onion

Pour in shell. Bake 350 degrees for 50 minutes.

STRING BEAN CASSEROLE

2 cans string beans, drained
1 can mushroom soup
1/2 can milk
1/2 can dried French onions
Dash of Worcestershire sauce

Mix well. Place in lightly greased casserole. Bake at 350 degrees for 30 to 45 minutes. Remove from heat, add rest of dried onions and bake 15 to 20 minutes longer. Oh the old timers will love this it tastes just like old fashioned banana pudding except no slaving over a stove and it is so much better than that lame kind made with instant pudding.

BANANA PUDDING (MICROWAVE)

1 1/2 c. sugar
3 tbsp. flour
3 egg yolks
2 c. milk
1 stick butter
1 box vanilla wafers
4 bananas
1 tsp. vanilla

MERINGUE:

3 egg whites
6 tbsp. sugar
1 tsp. vanilla

Mix sugar and flour. Add egg yolks. Add milk to make paste. Then add remaining milk. Cut up butter in mixture. Microwave on high for 4 minutes. Stir. Microwave 3 minutes or until desired thickness. Layer wafers and bananas. Cover with mixture. Beat egg whites until stiff and sugar and vanilla. Put on top of pudding. Brown in oven. Tuna Ball -
1 large can of tuna packed in water, drained.
1 package cream cheese - lite is good.
Mix both well. Add seasoned salt and tobasco sauce to taste. Form into a ball and serve with a variety of crackers. If you want, roll the ball in some crushed nuts.

I also make the green bean casserole, but I add a lot more of the French fried onion rings and leave the milk out completely. It is often requested that I being this to the pot lucks at work.

Don't forget the little smokies in BBQ sauce. That's a favorite no matter what age you are. Just put the weiners in a crock pot and add your favorite sauce.

Monkey bread is also good. Open a can of biscuits and use scissors to cut each biscuit into quarters. Roll each piece in a sugar/cinnamon mixture and place into a buttered pan. You can use a Bundt pan if you want to get fancy, or just a round cake pan will do.

INGREDIENTS
3 (12 ounce) packages refrigerated biscuit dough
1 cup white sugar
2 teaspoons ground cinnamon
1/2 cup margarine
1 cup packed brown sugar
1/2 cup chopped walnuts
1/2 cup raisins - I prefer it without
Preheat oven to 350 degrees F (175 degrees C). Grease one 9 or 10 inch tube pan.
Mix white sugar and cinnamon in a plastic bag. Cut biscuits into quarters. Shake 6 to 8 biscuit pieces in the sugar cinnamon mix. Arrange pieces in the bottom of the prepared pan. Continue until all biscuits are coated and placed in pan. If using nuts and raisins, arrange them in and among the biscuit pieces as you go along.
In a small saucepan, melt the margarine with the brown sugar over medium heat. Boil for 1 minute. Pour over the biscuits.
Bake at 350 degrees F (175 degrees C) for 35 minutes. Let bread cool in pan for 10 minutes, then turn out onto a plate. Do not cut! The bread just pulls apart. This casserole is absolutely delicious. Sometimes I fix the
hashbrowns by themselves as a side dish for supper.
Hashbrown Potato/Sausage Casserole
1 pound Brown & Serve link sausages (I prefer maple flavor)
2 pounds. frozen hashbrowns potatoes, thawed
10 oz pkg cheddar cheese, grated
8 oz. sourcream
1 can cream of celery
1 tsp. salt
1 tsp. pepper
1/2 stick butter, melted
Brown sausage, and set aside. Mix all other ingredients together. Put in greased casserole. Bake at 350' for 45 minutes. Remove from oven, and place sausage on top. Cook for another 15 minutes. You can also use lil smokies or beef smoked sausage or kielbasa pieces instead of link sausages.
