Cannellini beans?!

Cannellini beans?


I have a recipe for stuffed eggplant that calls for a can of cannellini beans. I have never heard of these, but I went to the grocery store yesterday and found them nowhere on the bean aisle. Is this where they usually are? If so, what other bean can I substitute for them?


Answers: junebug is right about the beans and substitutions. If you can't find them in the bean aisle, check the ethic/Italian foods section...or ask your grocer. It would really be best to use real cannellini beans if you can. Cannellini beans are italian white beans similar to navy or great northern beans. Cannellini beans are a little bit firmer but navy or northern beans work fine as a substitute. Cannellini are small round beans. You can substitute any small white bean. Did you check the dried beans? Cannelli beans are white kidney beans
