What do you stuff in your bird?!

Question:

What do you stuff in your bird?

Answers: Hard boiled eggs.
Makes a great talking point with my phsyciatrist ;-) Lemons, thyme, and garlic. I make the stuffing on the side. It dries out my bird. Try sauting ham and some vegetables like carrots, peas and potatoes. Stuff these in a bird and serve. Flavors come out really rich on the bird. an apple and a lime.
the flavour is out of this world. I don't like to stuff my turkey. I cook southern Cornbread/Sage dressing on the side. duck = orange, salt and pepper and lavender flower.
chicken = lots and lots and lots of garlic, sage, salt and pepper
Turkey = sage, apple, salt and pepper, cooked rice, sauted sausage or ham.
quail = no need to stuff them, split em up, marinade them with rose water to get rid of the game smell, season then grill them.
other birds = no idea. Try plums, apricots, apples, and cranberries. The stuffing comes out yummy, and you can pour some apple juice on top of the bird before cooking, too, so it simmers in the juice. Yummy!!! I do the classic but I add many new things, bamboo shoots, baby corn, water chestnuts, olives, black and green,, pimentos..???etc
My turkey is as close to 7lbs as I can get
I carve the bird,, remove the stuffing,, place in a slow oven to dry the mix and de-bone the bird after it cools,, I freeze the other breast .. then I do my dinner...
The remainder meat ,,legs,, wings,, carcase go into a stock pot overnight ( I set an alarm) now the meat,, that shreds off is cubed or shredded and frozen, for soup the next week... the stock is frozen also.and used for gravy or stew.
My dog used to eat aything I did not use except for the bones..
Ooopps I forgot the liver, gizzerd, heart,, make the gravy I use lemon halves, garlic cloves, salt, pepper, and fresh sage and rosemary. i just do lots of fresh garlic and onions with a couple slices of bacon on the top
but i really like some of these ideas here
i think i will try the apple and lemon or the lime soon
i also do my stuffing on the side
