Answers: Skirt steak just so happens to be used quite frequently in mexican cusine. it's a tough cut of beef, and its located between the abdomen and chest region. the more frequently a body part is used/exercised, the tougher the meat. for example, shanks, located on the leg region of animals is also a tough cut of meat and so require longer marinading times and/or cooking times for a tender dish. however skirt steak, if prepared properly is pretty damned good. when you get ready to make your burritos, just be sure that whatever you are going to marinade the beef in, that you do it for SEVERAL hours prior to cooking time. the reason why you do this, is that marinades usually have an acidic component to them, and these break the tissues of the beef down. this could be citrus ( lemons or limes) , or vinegar ( white, red, or balsamic) ---also some seasonings and salt in a marinade can aid in the tenderizing of the meat --(these are just a few examples). brining also does the same thing. brining , just so you know is a water, salt, and little bit of sugar combo, and in the case of brining you use KOSHER SALT ( not table salt). anyway, as i said if you prepare it well, and allow several hours for the beef to marinade before you cook it, it should be excellent. it is tasty afterall. if you are unsure about picking the proper cut at the grocery store, just ask a butcher for some assistance.

Skirt steak is the lining of the diaphram of the cow. I use it all the time to make fahitas..but in my opinion, it doesn't need to be marinated so long. I marinate in lime juics, garlic, cilantro, and chopped jalapenos for about an hour, and then grill it...perfection! It is also called flank steak which pretty much answers where it comes from on the cow. A very delicious cut if cooked properly cuz it is a very tough cut. If you could visualize a cow standing up on its back feet similar to a human standing-- then put a Skirt on the cow. Where it falls and seems most likely the spot where it would stick is the area the Skirt steak comes from.

The other name is Jeans steak. It's from the underbelly of the steer. We do not eat cows. They give us milk and little cows only.
Skirt steak and flank steak come from the same area and are similar.
