I have the procedure for cooking fries in a deep fryer down. But I was wanting to experiment with baking them in an oven in case I need to cook a larger quantity. Is there any special secret other than placing them on a cookie sheet and baking them? I already have the procedure down about soaking them in water and then drying them off. I just need to know a good temperature and time.
Answers: Preheat your oven to 400 degrees. After drying your potatoes, place them on the cookie sheet you want to bake them on. Drizzle with olive oil, season with kosher salt, fresh ground pepper, and any other seasonings you like, ie. paprika, parsley, onion, garlic, etc. Toss well. Place in oven, bake for 20 - 30 minutes, depending on the thickness of your fries.
New potatoes, quartered, are also good prepared this way. I haven't ever tried that myself but you may want to check out www.recipezaar.com. They have plenty of great cooking tips and TONS of recipes. Hope that the site can prove to be resourceful to you! I believe 400 degrees for approx 20-30 mins (turning every 10-15 to get evenly baked) if they're cut into a steak fry type size. Lightly brush or spray with vegetable or olive oil and sprinkle a favorite spice onto them. I love garlic salt and parmesan on my fries. Sprinkle parmesan on for the last 2 minutes in the oven or sprinkle on immediately as they come out of the oven. Use real GRATED parmesan versus the powder stuff. i never soak mine in water. how i make mine. they are very healthy and low in fat. i leave the peals on. I cut them into wedges. Then I take a plastic bag and I mix in seasonings. Like garlic powder, season salt, salt, pepper or what ever else I have around. Then I shake the wedges in the bag. Then I spray the cooked sheet. I then place the wedges on the cookie sheet or pan. I then take what is ever left in the bag and sprinkle over the top of the wedges. I cook them at 400 degrees for about 25 minutes or so. Depending on how crispy I want them. Then for a dipping sauce we use low fat ranch. Or regular ranch. These are very taste and low in fat. You can use any spices that you want. This same seasoning also tastes good on boneless chicken breasts. Soaking in water would be a very early step. You would probably want to spray them with something like PAM and bake, but really - frying is the way to go. You'll never approximate real fries by baking.
But a spray of PAM gives them a coat of oil and a pseudo-frying experience. As bast as you can get, short of the real way. Toss with olive oil. salt and pepper. Bake at 400 for 20-30 minutes.
