Flour vs Cornstarch in Macaroni and Cheese?


I have found recipes for macaroni and cheese some call for flour and some call for corn startch. What's the difference?


Answers: Flour is usually used to make a gravy base while corn starch is used more for sauces. Flour will add a bit more texture but, it will also add it's own flavour which really isn't bad for macaroni and cheese seeing as macaroni is made from flour origionally. However if you are making a mexican flavoured macaroni and cheese I would suggest using maseca (a corn flour). flour is better in mac n cheese definitely. cornstarch is better in clear things like sauce, soup or glazes. flour will make a thicker mix than cornstarch....use flour but only a tblsp. ot 2 added to milk....mix well.... My friend uses canned cheese soup. Flour is the best, I learned from my mother-in-law. Now I can make it without measuring. And everyone loves it.
