1 cup butter or margarine, softened
3 cups sugar
5 large eggs
3 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/4 teaspoon ground cloves
1/8 teaspoon apple pie spice
2 cups cooked mashed pumpkin (may use canned)
1/3 cup rum
1. In a mixing bowl, beat butter using an electric mixer on medium speed for about 2 minutes or until soft and creamy.
2. Gradually add in sugar, beating at medium speed 5-7 minutes.
3. Add in eggs, one at a time, beating just until yellow disappears.
4. In another bowl, combine flour and the next 6 ingredients.
5. In another bowl, combine the pumpkin and rum.
6. Add the flour mixture to the creamed mixture alternately with the pumpkin mixture, beginning and ending with the flour mixture.
7. Mix at lowest speed just until blended after each addition.
8. Transfer batter into a greased and floured 10-inch tube pan.
9. Bake in a 325° oven for 1 hour and 25-30 minutes or until a pick comes out clean.
10. Cool in pan on a wire rack for 10 minutes; remove from pan and let cool completely on wire rack. i have a gerat one but i'll have to fax it to you in the morning, sorry i diden't bring it to work with me Ingredients:
Butter-flavored cooking spray
1 ? cups unbleached flour

? cup fat-free vanilla yogurt (not artificially sweetened)
3 egg whites
1 cup canned pumpkin
Preparation:
Preheat oven to 350 F degrees. Mist an 8 1/2 x 4 1/2 x 2 1/2 inch nonstick loaf pan with cooking spray; set aside.
Sift flour, cinnamon, salt, baking soda, baking powder, cloves and nutmeg into a mixing bowl, set aside.
In a large mixing bowl, combine sugar, yogurt, and egg whites. Using a sturdy whisk, mix until thoroughly blended. Stir in the pumpkin. Add the dry ingredients to the pumpkin mixture. Stir until no flour is visible. Pour into the reserved pan; bake for 55-60 minutes or until toothpick inserted into the center comes out clean.
Cool in the pan on a rack for 10 minutes. Remove cake to the rack to cool completely. When cool, cut into 8 slices. 3 c. sugar
1 c. vegetable oil
4 eggs
1 1/2 tsp. cinnamon
1 tsp. nutmeg
2 c. cooked pumpkin
3 c. flour
2 tsp. baking soda
1 c. favorite nuts and/or raisins, optional
Combine ingredients in the order listed. Add 1 cups nuts and/or raisins, as you desire. Pour into a greased pan. What we use is an angel food pan to make a nice ring. Bake at 350 degrees for one hour. I hate just posting a link here, but this is one that is very good. We typically make pumpkin bars around here with cream cheese frosting and pecans on top...but here is the cake you are looking for:
