Anyone have a fried chicken recipe using crushed corn flakes for coating chicken?
My sister in law would cook the best fried chicken using crushed corn flakes to coat the chicken. It was fried, not baked, but either recipe would be appreiciate. She passed away a few years ago, and unfortuately I didn't get the recipe. I believe at one time it was on the box of corn flakes. Thank you for taking time to help me.
Answers: 3 pounds chicken pieces
1/3 cup flour
1 1/2 teaspoons paprika
1 teaspoon salt
1/4 teaspoon pepper
1 egg, beaten
2 tablespoons water
1 cup crushed corn flakes
1/2 cup flour
1/2 cup butter
Combine 1/3 cup flour, paprika, salt, and pepper in a food storage bag. Put chicken in bag and toss to coat. Whisk together egg and water. Dip coated chicken in egg and water mixture. Combine corn flakes with 1/2 cup flour; roll chicken in the corn flake mixture.
Heat butter in skillet over medium heat; add chicken and brown on all sides. Lower heat, and continue to cook, turning occasionally, for 35 to 40 minutes, or until chicken is tender and juices run clear. You can actually buy already-crushed corn flakes in the grocery store, on the same aisle as flour. You fry it just like you do with floured chicken, but you need to dip the chicken in egg before you coat it; otherwise, the corn flakes won't stick. Don't roll the chicken parts in the coating until just before you put it into the skillet or the coating will get soggy. I taught a friend how to cook fried chicken once. He added cornflakes to what I had told him (just flour and some seasonings). Now, he makes better chicken that I. Basically its just fried chicken with flour, your favorite seasonings and crushed up corn flakes. I never measure, but I would guess about two cups of that to your flour mixture would be enough to fry a whole cut up chicken. The beautiful thing about frying chicken is, you cant really do it wrong. Trying to cook like your sister in law is a nice compliment. You can create some memories like she did. Get busy. I can cook fried chicken, fried, porkchop, fried shrimp, fried fish, fried vegetables, but only using corn meal, flour, egg, black pepper, salt, water, and oil.
no secrets on it, but tips here: mixing all the seasoning ingredients well before the main ingredients, and cook with hot oil, watch and stay in the kitchen while frying it.

2 1/2 lbs. frying chicken
3/4 c. all-purpose flour
2 eggs, beaten
4 c. Post Toasties (corn flakes), finely crushed (about 1 1/4 c.)
1 tsp. salt
1/4 tsp. pepper
Oil for frying
Rinse chicken and pat dry. Coat in 1/2 cup of the flour, then dip into egg. Combine cereal crumbs, 1/4 cup flour, salt and pepper in plastic bag. Shake a few pieces of chicken at a time in crumb mixture to coat well.
Heat 1/4 inch oil in large skillet or electric skillet. Add chicken and fry over medium heat, turning to brown both sides. Reduce heat; cover and cook 30-35 minutes or until tender. Remove cover for last 5 minutes. Makes 6 servings.
