What can I make with leftover eye round?
My family never eats eye round roast the next day. Is there a dish I can turn it into?
Answers: 1- Chop it up in a processor, add a bag of frozen mixed veggies, 2-1 tablespoons bouillon, can of dice tomatoes, 4-6 cups of water, bring to boil, then simmer for delicious soup.
2- Twice baked potatoes - bake about 4 potatoes until soft. Split in half and scoop out leaving shell in tact. Mix diced onion, cheese, chopped beef, etc and refill potato shells. Bake until cheese melts at 350
3- Mix chopped beef with re fried beans, wrap in a flour tortilla and pour over enchilada sauce.

5-Stuffed Bell Peppers Sure. Most any left over beef can be used for casseroles. I like to use it in Stroganoff.
1 boneless beef sirloin steak, 3/4 inch thick (1 lb.) - OR use leftover steak or roast.
1 cup Sour Cream
2 Tbsp. flour
1/2 cup water
2 tsp. instant beef bouillon
1/4 tsp. pepper
2 Tbsp. butter or margarine
1-1/2 cups sliced fresh mushrooms
1/2 cup chopped onion
1 clove garlic, minced
4 cups hot cooked noodles
PLACE steak in freezer 30 minutes to firm. Cut across grain into 2x1/2-inch strips.
MIX sour cream and flour in small bowl. Stir in water, bouillon and pepper; set aside.
MELT butter in large skillet on medium-high heat. Add 1/2 of the steak; cook and stir until steak is cooked through. Remove steak from skillet. Add remaining steak and vegetables to skillet; cook and stir until steak is cooked through and onion is tender. Return all steak to skillet. Reduce heat to medium.
ADD sour cream mixture; cook until bubbly, stirring constantly. Cook an additional minute. Spoon over hot noodles. Beef BBQ. Slice thin add bbq sauce
and warm through. Serve with some potato salad.
I never use store bought bbq sauce, I put together my own sweet version. Tomato sauce, onion, green pepper, a smidgen of honey .worchestershire sauce,garlic and dark brown sugar.
How about beef hash or hot roast beef sanwhiches? Hot open face roast beef sandwiches. Eye of the Round is the perfect cut of meat for these sandwiches.
Slice your beef thinly, warm. With left over juices from the roast, prepare a gravy. Place the sliced beef on toasted bread, add gravy.
You could also prepare French Dip. Thinly slice your roast, warm. Place sliced beef on buns, warm left over juices from the roast, and dip. I make sandwich spread with my leftover roast.
I run the meat through my Kitchen Aid mixer food grinder attachment adding a little bit of carrot, onion and celery as I grind it. You could do this in a food processor also.
To this I add a sprinkle of garlic, salt, pepper, a small amount of sweet pickle relish and Miracle whip.
