Rotisserie chicken: what other ways can I serve this besides?
the way it comes. Anyone have any ideas? Don't want to make chicken salad...but I am in a cooking slump.
Answers: i do a couple of things with rotisserie chicken.
1. cut or tear into pieces and serve on toasted french bread with either roasted garlic or onion and chive cream cheese.
2. cut or tear into pieces and make caesar salad wraps. get some romaine, some caesar dressing, parmesan and tortillas (i use whole wheat). throw some chicken and romaine on the tortilla, drizzle with caesar dressing, sprinkle with parmesan and fresh ground black pepper. roll up the tortilla like a burrito and enjoy!!
hope this helps a bit. you can make sandwiches I always get a Rotisserie Chicken and make Chicken and Dumplings.
De-bone of of the bone
In a large pot on the stove add two large cans of Chicken Stock and one can of Cream of Chicken and Herb Soup, mix well. Heat to almost a boil and add Mrs. Mary's (or brand in your store) already made dumplings. Stir so they don't stick together. I drop mine on the floor frozen so they break in little pieces so I can just dump them in. Add chicken and let simmer for about 20 minutes until dumplings form. Chicken noodle or vegetable soup, warm chicken salad with chinese noodles, chicken stew, chicken & dumplings, chicken with a cream gravy on rice, toast or waffles, etc. Ooohh, rotisserie chicken is great in enchiladas. Dice it up with some tomatoes and peppers. Roll this in tortillas. Cover with any kind of tomato-based sauce, then cover with cheese. Cook it at 350 until the cheese is bubbly . Shredded rotisserie chicken is a staple in my house. You can use it for anything that requires pre-cooked chicken.

I make a quick sauce using cream of chicken soup1 sm.grated onion,1 cup chopped canned green chilis.1tsp chili powder 1tsp ground cumin.mix. thin with water.dredge tortillas in sauce put chicken green chilis and cheese in and roll.lay together in cassarole dish put leftover sauce on top.bake 350--- 30 min top with more cheese the last 4-5 min
shredded chicken sauteed with red and green peppers and onions.wrap in tortillas with ranch dressing,serve with a salad.
spinach salad with sliced breast,bacon and poppy seed dressing . serve with crusty rolls. or buttered sour dough bread.

peace><> Shred it & mix it with BBQ & heat through. Serve on toasted rolls with cole slaw or corn on the cob.
Cut it into cubes, combine with 16 oz pkg frozen mixed veggies (any mixture-thaw & drain), 2 c. cooked rice, 1 can cream of anything soup, 1/2 c. milk & season to taste. Pour into 9x9 baking pan. Bake at 350 for 25 minutes. Top with some sliced almonds or shredded cheese, bake 5 more minutes or until bubbly & nuts are browned or cheese is melted.
Heat 1 qt chicken broth, add 1 c. frozen sliced carrots, 1/3 c. chopped onion, 2 tbs chopped parsley, s&p to taste. Add chicken & cook until heated thru. Put 1/2 c. cooked rice in a bowl & ladle soup over rice. Can add more veggies to taste. quesadillas and lasagna are great ideas
