Question:

If you put two baked potatoes in the frig. after taking them from the oven?

letting them cool a little before putting in frig., will they go bad or can they be re-heated in microwave? Novice cook.

Answers: Yes, you can re-heat them in the microwave. Potatoes are good for several days after cooking and putting in the fridge but I usually used them to make hash-browns once they've been microwaved. I cook them, cool them, then make hash browns. There's something very satisfying about hasbrowns in the morning with lots of butter, yum! They will keep well in the fridge for a couple of days. They can be microwaved perfectly (though the skins won't be as crisp). About 1 1/2 to 2 minutes.

Split them and break up the insides a bit and add butter and cheese (or whatever topping you prefer), put them on a plate and cover before microwaving. Allow to stand for a minute before serving.

You can also bake potatoes successfully in the microwave from raw. They must be pierced with a skewer or pricked deeply with a fork or they can explode. Place in a microwaveable plate or dish and microwave on medium power for five minutes, allow to stand for two minutes and microwave for a further 3 to 5 minutes (or until a fork can be easily inserted). The times depend on the type and size of the potato and you don't get the fluffiness associated with oven baked potatoes.

It is always important to let food like this stand for a minute or so and preferably to give it two sessions in the oven, standing in between. Microwaving produces hot spots and allowing to stand continues the cooking to the parts that have not been so hot. you can reuse them. but i wouldn't reheat them in the microwave though. they aren't too good that way. instead you can slice then and brown them in a skillet with peppers and onions . you can add some smoked or kielbasa sausage to it also. You can reheat but they will not be as good here is another idea instead
Cut leftover baked potatoes into 1/2-inch pieces and brush with olive oil and seasonings. Bake at 425 degrees, turning occasionally, for about 35 to 45 minutes
