Answers: GRILLED SALMON WITH PINEAPPLE SALSA

Fresh Pineapple Salsa
1 1/2 c. chopped pineapple
1/4 c. chopped red onion
2 tbsp. sugar
1 tbsp. lemon juice
1/2 - 1 tsp. chopped jalapeno pepper
1 tsp. finely minced ginger
1 tbsp. fresh chopped mint

Mix ingredients in glass bowl. Adjust seasonings to taste. Refrigerate at least 4 hours.
Makes 1 3/4 cups.


Grilled Salmon and Marinade:

4 x 8 oz. salmon steaks

MARINADE:

6 tbsp. butter
1/3 c. light clove honey
1/3 c. packed dark brown sugar
2 tbsp. lemon juice
1 tsp. liquid smoke
Dash Tabasco Simple is better. I like lemon juice, brown sugar, onions and garlic. For sides I like a coleslaw or green salad and garlic bread. And a nice ale or white wine is bueno. Lime butter (mix lime juice, a bit of lime zest, and some parsley with softened butter and brush on both sides of salmon before and during grilling). Serve with simple boiled potatoes. I would ask Hung, the NEXT TOP CHEF! YEAH! My boyfriend makes fantastic salmon on his George Foreman grill -
He bastes it with crushed garlic and sprinkles on very finely sliced green onion.
He serves it with rice, and with a side of steamed broccoli with oyster sauce.
With that, a glass of iced jasmine green tea is very, very good.

I personally like it with a premade sweet cajun glaze from the grocery store, asparagus drizzled in butter and a load of ground pepper, and mashed potato.
I like to have it with a cold, light Riesling wine, though because the glaze is spicy you can go for a heavier white wine, too. Take the salmon spice it with lemon salt, garlic, pepper and a little oregano, wrap it in coconut palms if available if not use foil. Place it inside the grill around the coals, and cook for about 15 to 20 minutes. Take cooked white rice, add cooked mixed veggies, let cool and add mayo, and chill. Another side dish could be pasta, with melted butter, and oregano, sprinkle cheese, serve hot with hot bread sticks. Fruit flavor iced tea is good. Slice lemon for both the tea and the salmon is also good. For desert serve sherbet. salmon is the only fish i eat! i put salt,pepper,paprika, pieces of lemon then i put it in the oven.

best side dishes with fish : good saled and mashed patatoes. Lather with copious amount of mayonnaise, Put a few slices of bacon on top. Wrap securely in 2 layers of tinfoil and run through complete cycle in dishwasher.

SALMON LOG
Equal parts smoked (or canned salmon with 1 tbsp. liquid smoke) and cream cheese. About 1 cup each.
2 tbsp lemon juice
2 tbsp grated onions
1 tbsp horseradish
1/2 tsp salt
1 cup chopped pecans
Blend all ingredients except nuts. Form into roll and roll in pecans.
Serve with snack crackers.

SALMON CHIP DIP
2 Cups smoked or canned salmon
1 can mushrom or tomato soup
8 oz. cream cheese
1 cup mayonnaise
Envelope unflavored gelatin
2 tbsp water
1 cup chopped celery
1 cup chopped green onions.
Serve with dip chips. i tried it for the first time last week grilled with a regular honey mustard dressing. SO good! i'd serve that with a rice pilaf and spinach salad. I enjoy it best when the salmon is lightly coated on both sides with olive oil and then seasoned with Lawry's Seasoned Salt, grill each side approx 5 min (or until flakes). Good just like that or put it on a Kaiser roll that is cut in half and buttered (and toasted on grill-if you like).

Side Dish-steamed brocholi smothered in butter, add in fresh mushrooms if you like them.

Beverage-white wine (I really like Martini &Rossi Asti) I am a purest on salmon. I don't like sauces or marinades on them. I prefer a boneless cut
Use a BBQ grill on high, Place a sheet of foil on the grates, Lay salmon skin side down. Sprinkle with lemon juice, pepper, and olive oil.
Close the top of the BBQ. 10 minutes should do it. Do not turn the salmon. A spatula run under the salmon will lift the salmon off and leave all the skin.
Serve with fresh asparagus w/ butter and pepper
A dry Savignon blanc will top it off
