What does vodka bring to recipes?


I am looking up a rigatoni mozzarella recipe...if anyone has a good one send it my way please, and I found a rigatoni with vodka sauce or something. In all my time cooking, it's the first time I'd heard of a vodka sauce. What does vodka bring to a recipe? I've personally never tasted vodka, so I have no idea what it even tastes like. Thanks!


Answers: The alcohol in the vodka helps extract non-water-soluble flavors and makes them more readily available to the taste buds. Then the booze cooks off and you don't taste it. Saute finely chopped garlic onion,pepper, pitted calamata olives, sliced baby portabella mushrooms until golden.

Remove from pan. Put in processor and chop until but not mushy

put back in pan and boil down 1 cup good vodka like gray goose. When using wine brandy or vodka use the type you'd like to drink

After it boils 3 minutes add 2 #303 cans tomato puree, i large can paste and 1 can chopped tomatoes.

add 2 tablespoons sugar or to taste it should not be bitter but on the sweet side.

6 leaves basil en chiffonade
quarter tsp oregano
1 anchovie

cook on low stirring often for 2-3 hours

Finish with fine chopped garlic quarter pecorino romano cheese (grated) and 4 FRESH bay leaves

after another half hour remove bay leaves and serve
