Does anyone have a favorite recipe for homemade pickled beets?



Answers: Pickled Beets

Wash beets
Remove stems and tails to within 1” of beet (to prevent bleeding)
Cook beets for 35 minutes or until tender.
Slip off skins and slice (if necessary)

Slice small onions to form rings.

In 3 qt sauce pan, combine:
2 cups vinegar
1 ? cup water
2 cups sugar
1 tsp cinnamon
1 tsp cloves
? tsp salt
Heat to boil mixing thoroughly

Wash canning lids rings and pint jars in dishwasher (otherwise sterilize by boiling)
Pack hot beets and raw onion rings into pint jars, ?” from top.
Pour boiling sauce into jars.
Seal with lids that have been in boiling water; add lid rings.
Lower jars into boiling canner.
When boiling resumes, lower heat to a constant simmer and cook for 35 – 45 minutes. There are lots of different recipes on www.allrecipes.com

I just add sugar and vinegar until it tastes right that is how my mom taught me not too much of either just a little a time. But check out the web site I am an old fashion cook and do not do much with recipes just have them mostly in my head I started with a recipe and now they are just in the head. put some beets and pickles in a jar, and let the pickles pickle the beets. then lable them HOMEMADE. I have made them by useing canned, sliced beets. Heat the liquid from the can with 2 Tbsp. white vinagar, 2 Tbsp. sugar and a pinch of salt. Pour over beets in a bowl or jar and allow to marinate (pickle) for a day. I have also made pickled hard cooked eggs along with the beets. Optional: add onion slices and /or a cinnamin stick. I just take large jar of pickles and save the juice.Then drain my beets and add onions to them in the pickle juice.Set it in the fridge for 3 days and then they are delicious... the reward to type a recipe Isn't worth it
