Give me your best muffin recipe?


I am wanting to make muffins for my bible study group and need some ideas. I need something without nuts, as I am allergic. Maybe a little on the "healthy" side of muffins, as wel are all young moms who could use something tasty, yet good for our bodies.

WAKE UP HEALTHY MUFFINS

2 c. flour
1 c. wheat germ
3 tsp. baking powder
2 tsp. cinnamon
1 tsp. pumpkin pie spice
1/2-1 tsp. salt
3/4 c. oil
4 lg. eggs
1 3/4 c. sugar
2 tsp. honey
2 c. grated carrots
1 c. grated zucchini
3/4 c. raisins
1/2 c. crushed pineapple, drained

Sift dry ingredients together and set aside. Put eggs in large bowl and beat lightly. Add oil, sugar, honey and mix well; then add rest and mix well. Add dry flour mix to egg mix and mix only until moist. Fill muffin tins 2/3-3/4 full. Bake at 350 degrees for 20-25 minutes. Makes 24 large or 30 regular muffins. Ingredients: 2 cup of all- purpose flour 3 teaspoons baking powder 1/2 teaspoon of salt 3/4 cup of white sugar 1 egg 1/4 cup of veg table oil Directions: 1.preheat the oven to 400 degrees F(205 degrees c). 2.stir together the flour, baking powder,salt, and sugar in a large bowl, make a well in the center.In a small bowl or 2 cup measuring cup, beat the egg with a fork, stir in milk and oil. Pour all at once into the well in the flour mixture. Mix quickly and lightly with a fork until moistened, but do not beat. The batter will be lumpy. Pour the batter into paper lined muffin pan cups. Variations for blueberries muffins just add 1 cup of fresh blueberries, chocolate chip muffins just add 1 cup of chocolate chips, for raisins muffins add 1 cup of raisins. Bake for 25 minutes, or until golden. Hope this helps (omit the nuts..it's just optional)

Crumb Topped Banana Muffins

1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 large ripe bananas, mashed
3/4 cup sugar
1 egg, lightly beaten
1/3 cup butter, melted

Topping
1/3 cup packed brown sugar
1 tablespoon flour
1/8 teaspoon cinnamon, to taste
1 tablespoon cold butter
1/4 cup chopped nuts (optional)

In lg bowl, mix the dry ingredients.

Mix bananas, sugar, egg and butter.

Stir into dry mixture just until moistened.

Fill muffin cups 3/4 full.

Combine first 3 topping ingredients.

Cut in butter until crumbly.

Sprinkle over muffins.

Bake at 375° for about 20 minutes, until muffins test done.

Cool in pan for 10 minutes.
