Does anyone know the recipe for subways mayonaise?????
I have gone to the shop and bought every single type of mayo, but none are the same.

If you don't, how do you know that they use kraft???
BTW, i have tried kraft mayo and it tastes nothing like it.

BTW, i have tried kraft mayo and it tastes nothing like it. Mayonnaise is HARD to make!!!!!!!! And for the home cook, generally requires raw eggs., which are a salmonella hazard.
The general recipe is 6 eggs, salt, white pepper, garlic powder, or garlic paste, mustard seed and a cup of canola oil (or other oil, except olive, whole olive oil doesn't congeal). Mix all ingredients except the oil in a blender or food processor--or with a hand blender for best results (I can only get it to congeal with my Bamix hand mixer). SLOWLY, stream in the oil until the mixture forms mayonnaise. Sometimes it can take up to 5 minutes. If it's not white and creamy after 10 min. start over.
It will usually stay mixed for 3-5 days.
Add vinegar and sugar once congealed to taste--NOT BEFORE. Subway mayo does taste tart and sweet, which would suggest the addition of vinegar and sugar after the mayo is made.
