I haven't been breaking the yolks until I bought a few dozen on sale recently. So I don't think it's the way I'm cracking them.

I don't know how old they are. My wife bought them at a yard sale. yes, for sure. the freshest eggs will crack easily and the yolks will be high and round. A very fresh egg will withstand rough treatment and the yolk will not break. (within reason) FResh eggs are the best for making creme brulee! hope this helps, chef paul No, I think it means you're being too rough with your eggs. break the egg on a flat surface, not on the corner of something, that prevents it. It does not mean that the eggs are old. When you crack the eggs open, you're probably doing it too hard. The surface that you crack the egg on damages the yolk once it's cracked. That's why it breaks. You can tell that eggs are old if the white spreads out a lot. The tighter the egg white is around the yolk, the fresher the egg. I CAN TELL YOU, WHEN PUT IN WATER, FRESH EGGS SINK AND OLD EGGS FLOAT. THAT'S ALL I KNOW. I'd say so and also rotten eggs tend to float in water. no you just dropped them too hard That is the normal reason why egg yolks break so easily. Are they over 40 days old?
