Whats an easy fool-proof recipe for making gooseberry jam/preserve?

2.7kg (6lb) Gooseberries, slightly under-ripe, topped and tailed
2.7kg (6lb) Sugar
1.1lt (2 pints) Water
15g (?oz) Butter
Use slightly under ripe gooseberries and remove the tops and tails.
Place all of the fruit into a heavy bottomed saucepan and cover with water.
Bring to the boil and cook, stirring occasionally for 30-35 minutes or until the fruit is tender.
Remove from the heat.
Pulp or mash the fruit.
Add the sugar, stir until fully dissolved.
Add the butter.
Bring to the boil and boil rapidly, stirring frequently, for about 10 minutes.
Test for a set, when the setting point is reached, remove from the heat.
Skim the surface with a slotted spoon.
Pot the jam into sterilised jars. INGREDIENTS
2 quarts fresh gooseberries
6 cups white sugar
1/2 (6 fluid ounce) container liquid pectin
DIRECTIONS
Remove blossom and stem ends from gooseberries. Force berries through food mill. Measure 4 cups of the berry mash into a large pot. Stir in the sugar. Bring to a full rolling boil over high heat, and boil hard for 1 minute, stirring constantly. Remove from heat, and stir in pectin at once. Skim off any foam with a large metal spoon.
Sterilize jars and lids in boiling water for at least 10 minutes. Take turns with skimming foam, and stirring the berry mixture for 5 minutes to let it cool slightly. Ladle into hot sterile jars, leaving 1/4 inch headspace.
Process in a boiling water bath for 10 minutes
