I am having my family over for dinner on Sunday and I am thinking about doing a pork tenderloin in the crock pot. Do ya'll have any good recipes to spruce it up?


Answers: the one thing i know about crock pot cooking is that its usually better to use a fattier cut of meat than tenderloin. maybe try a pork loin or shoulder instead. it will be cheaper too. i like to cook pork slowly in beer and butter with some good mustard and onions. good luck. I wouldn't use the crock pot for pork tenderloin because it's already pretty tender. Here's a really easy recipe for your tenderloin:
Pork Tenderloin with Dijon Marsala Sauce
2 pork tenderloins
4 tablespoons Dijon mustard
1 tablespoon oil
2 tablespoons butter
2 shallots, minced
1 cup Marsala wine
1 tablespoon Dijon mustard
1 cup heavy cream

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Coat pork tenderloins generously with mustard. Oil a 9x13 inch baking dish.
Heat oil in a large skillet over medium-high heat. Arrange tenderloins in pan, and brown the meat. Turn to brown evenly. Transfer meat to prepared baking dish.
Bake in preheated oven for 20 minutes. Turn, and continue cooking for 20 minutes, or until desired doneness.
Meanwhile, melt butter over medium heat in the same pan used to cook the pork. Cook shallots in butter until soft. Stir in Marsala, mustard, and cream, and cook until volume of liquid is reduced by half.
Slice pork, and place on a serving dish. Spoon sauce over meat, and serve. For me there is no other way to cook pork than in the crock pot. Otherwise always just seems too dry. I love the many flavors and textures in
this recipe. I did use carrots instead of celery for my hubby and I wish I had used more. I love the tomatoey flavor as well.

Pork Tenderloin Creole
2 pork tenderloins, about 1 1/2 to 2 lbs total
1/2 cup flour
1 tbsp Creole seasoning
1 small onion, coarsely chopped
1 small green or red bell pepper, coarsely chopped (or a mixture of both)
1 rib celery, sliced
1 package chicken gravy mix
1 can (14.5 ounces) diced tomatoes, undrained

Cut tenderloins in half; dredge in a mixture of flour and the Creole seasoning. Place tenderloins in slow cooker/Crock Pot. Scatter onion, pepper, and celery over the pork. Cover and cook on low for 7 to 9 hours. add potatoes & cream of mushroom soup. It taste great. the seasonings I use are Lemon Pepper, Sazon (orange packet) and a little everglades seasoning.
