Answers: I wouldn't freeze it as has been suggested, there is no need for that. Fruit cake is much better if allowed to mature in cool, not freezing, conditions. Just a small amount of Brandy is all you need before you wrap it up in greaseproof paper and leave it until it's time to marzipan and ice it. Too much Brandy and it will turn out soggy, not moist like it should be. Despite what one answer said, making it in October is a good time. I have some Christmas cake left over from last Christmas and it tastes just gorgeous. in the freezer and every week. lol !!!! I think you've had a few too many glasses of Brandy if you are making a christmas cake in October. Hello I'm May with this news bulliten.

I've just recieved notice that this is October. Halloween has not passed yet, nor has Thanksgiving. Yet some people have already made a cake for Christmas.

I understand it takes a couple of months to get ready like fruit cake. airing cupboard Perhaps the fridge would be best, although i'm no expert on cake making. Give it brandy once a week maybe? idk my bff jill? I dont know. I'm still trying to get Tiny Tim walking. Wrap it in waxed or parchment paper, then foil, and store it in an airtight container in a cool place. Maybe in a closet that people don't visit very often.

Feed it brandy every 2-3 weeks.

Hooray for people that enjoy Christmas fruit cake! Obviously some of the idiots on here don't realise how long it takes for a decent proper Christmas cake to be made. My Mum used to keep hers in the airing cupboard for weeks and top up with the alcohol about once a fortnight. My Mother in Law made my wedding cake and just kept it in the kitchen. She topeed it up with brandy practically every time she looked at it. By the time it was iced, it had a full bottle of brandy in there but tasted yummy. Good luck, wish i had the skill and patience to make one. Store your Christmas cake inside a polythene lidded container in the coolest room in the house/flat/ Turn the cake upsidedown, prick with a fork and pour on half a cup of brandy. Two to Three week time do it again. wrap in tinfoil leave somewhere cool and dark. feed weekly. stick all over with a skewer and dribble on the boose! dont make it too wet at any one time. enjoy.
