Leftover Fajitas?


Anyone have any suggestions on how to use some left over fajita meats and veggies?? They gave us too much at the mexican restaurant last nite and I want to do something creative rather than just microwave them and make more fajitas


Answers: Chop'em up, mix w/ cooked rice, top w/ pico di gallo and cheese. Bake at 400 till hot and cheese in bubblin'...serve w/ sour cream, guac, and more pico di gallo.

FYI-
Pico di Gallo
2 med chopped, seeded tomatoes
1 small yellow onion
1 small jalapeno (more to taste)
lime juice
salt
fresh cilantro

Add all ingredients to bowl and let rest for a few minutes for the flavors to meld...magnifico! Lightly stir fry them and eat with rice. Mix them with a Mexican flavored rice. Quesadillas!

Chop it all up and put it in scrambled eggs. Top with shredded cheese and a side of guacamole.

Mexican quiche. Oooo....I like this question. You can make a quiche using the fajiti mixings by adding eggs, cheese and milk or - easier - an omelet. You could warm it up with cheese and put it over rice. Saute garlic and broth (beef or chk..depending) add the fajita stuff pour over rice or noodles. I love to chop them and add as a filling for an omelette or
chop and fry up with some potatos and serve with eggs.
I also love them for quesedillas, yum
