Answers: i'm a pro at this - i must go through 15 pumpkins a season:
heat the oven to about 350 -i actually use 370 degrees...
cut the top off a pumpkin and pull out all seeds into a colander - put some foil on a cookie sheet and spray it with some pan or rub with veggie oil. separate the pulp from the seeds and spread on the cookie sheet. sprizt with a little olive oil and sprinkle generously with garlic salt. bake for 20-30 minutes. scoop them out of the pumpkin into a collander, rinse the pumpkin flesh off. Toss them lightly in olive oil and salt. Spread them out on a cookie sheet, and put them in the oven at 350 till their browning...YUMMY!!! clean out of pumpkin and you get tons of seeds put some spices and seasonings on them and bake in the oven Clean the seeds thoroughly after removal. Line a baking sheet with aluminum foil. Spread seeds out in a single layer and pat dry with a paper towel. Drizzle vegetable oil over seeds lightly and then add sea salt or kosher salt - just evenly sprinkle it. Stir seeds on cookie sheet to coat ever one, them re-spread them with your spoon, sprinkle a little more salt and pop them in a 350 degree oven. Watch them and take them out when they are brown enough to your liking. We like them super crunchy, so I let them get pretty brown. Nix the garlic salt as another poster commented...a lot of people don't do garlic and with the combo of garlic salt and regular salt...you're likely to be scrunching up your nose with all that saltiness. the key to my perfect seeds is to soak them overnight in salted water. next day rinse and pat dry then bake helloooooo,gf,i find the easy way is(if you got a fire)put them about 1in thick in pan,place over fire and shake ever once and a while,what,no fire,place in oven like peanuts@300 4about15 min. ,lrt cool in oven, if starts to burn reduce temp. pull out,cool,and do it 4 -10min.
