Answers: I use cider - beer made of apple - to make Normandy sauce for my pan fried dory..
2 Dory fillets, skin on (or any white cold water fish)
2 tbs Olive Oil
Salt and pepper to season
SAUCE NORMANDY
30g butter
150g button mushrooms, sliced
2 tablespoons chopped parsley
Zest of ? lemon
Juice of 1 lemon
1/3 cup dry cider
1/3 cup chicken stock
2 tablespoons pure cream
Fish:
Heat a heavy based frying pan with olive oil until hot and just starting to smoke. Season the skin side only of each fish fillet with salt and pepper, and place skin side down in the pan. Cook for 2-3 minutes until skin is crisp, turn over and cook to your liking.
The sauce
Heat half the butter in a saucepan, add mushrooms and fry until collapsed. Add parsley, lemon zest and juice and cook for a further 1-2 minutes. Add cider and chicken stock and bring to a gentle simmer; reduce by half then add cream and the remaining butter.
Serve with steamed potatoes and wilted spinach and a lemon wedge.
Yummm.. I love dory.. Easy. Get a large double pot and steam your crabs, using beer in the water. Add old bay seasoning to the crabs after they die, but are still cooking. I know it's bad, but that's the only way to get the best & freshest crabs. BEER CAN CHICKEN
1 4 lb or larger whole chicken
Emeril's Original Essence Seasoning
1 12 oz. can of beer, any brand
Remove giblet package from chicken and discard or save for another use.
Spread Emeril's Original Essence Seasoning liberally over chicken. Wrap chicken in plastic wrap and refrigerate for an hour.
Preheat grill to 375°F to 400°F.
If your grill has two burners, heat only one. If it has three, heat the two on the outsides and do not turn on the middle burner.
Remove plastic wrap from chicken. Open beer can (you may add garlic to the can of beer if you wish) and insert the full beer can into the chicken (so that the chicken is standing upright with the can inserted into it).
Stand the chicken upright on the burner of the grill that is NOT lit. The beer can should fit snugly in the chicken so that the chicken does not fall over. Close the grill and cook the chicken for approximately 2 hours or until done.

You can add beer to any pancake recipe - or replace part of the liquid ingredients.

You can make Beer Batter for anything deep fried - you drege the items in crumbs, then dip into beer batter - throw in the frier. So good. Subtitute beer for water (or milk) when making biscuits out of Bisquik baking mix. It makes light and fluffy and slightly tangy biscuits. This is an actually recipe I got off the box many years ago. I use beer in my fish batter and in my chili and in bread and well you get the idea you can use it to replace almost any liquid and it brings a lot of flavor to the dish You can marinate steak in beer and then eithr grill it or broil it. It makes the meat very tender and juicy. Guinness Cake;
250g wholewheat flour
2tsp baking powder
1tsp mix spices
100g marg.
100g soft brown sugar
100g each of raisins, sultanas,chopped walnuts
50g copped mix peel
2 eggs
210+ml Stout
Mix flour, baking powder,spices. Rub in marg. then stir in sugar.
Add the fruit, peel and nuts, mix well.
Beat the eggs with 150ml Guinness add to the mixture and blend well.
Pour into grease proof paper lined cake tin.
Bake@ 170c gas Mk3 325f for 11/2 to 2 hours until brown and firm to touch.
When cooled and removed from tin. Turn the cake up side down, prick it with a fork and pour the rest of the stout. I like to cook my bratwursts and other sausages off the grill and into a pot of simmering beer and thinly sliced onions....The beer adds a great depth of flavor to the sausages......I also like to use beer in my tempura batter in place of club soda.....and in most batter recipes (think: fish and chips) Oh, and BTW, the guy with the Guinness Stout cake recipe, I've had that, and it's very good.....Enjoy
