I need a good veggie soup recipe for the crock pot?


I have everything on hand- carrots, cilantro, bell pepper, tomato, onion, zucchini, garlic. And a few basic in the pantry.

Can you help?

Hope this help. I have lots of soup recipes using the crock pot. I've been using a crock pot for over 25 years, and I've found the best source of recipes for it is a cookbook author named, Mabel Hoffman. You can look her up online, or you can go to the Food Network website and enter crock pot in the search field. There are tons of great recipes there. You can always add some uncooked pasta towards the end of the cooking time, or some dry alphabet pasta. Also any kind of beans will add protein to the soup. Have fun.... ok..saute some garlic in olive oil,add chopped onions,chopped tomatoes and any broth that are available..then add carrots and zucchini,salt and pepper to taste..put some chopped cilantro leaves before serving and some garlic bread! HEARTY VEGETABLE SOUP

2 lb. cross-cut beef shanks
1 Tbsp. salt
1 1/2 tsp. Worcestershire sauce
Dash pepper
2 tsp. dried parsley flakes
1 chopped onion
1 pkg. frozen cut green beans
1 cup chopped celery
1 cup sliced, peeled carrots
1 cup peeled, diced potatoes
1 can cut-up tomatoes
1 can whole kernel corn, drained

Combine all ingredients in crockpot. Add water to cover. {About 2 cups} Stir well. Cover and cook on LOW setting for 12 hours. {Or on HIGH setting for 5-7 hours.} Before serving, remove bones, cut meat into bite-size pieces, and stir into soup.
