Its not "Chili" yet here but i'll eat chili whatever the weather! chili goes well with everything!! =) A nice green salad and some french baguette loaf. Mmmm, yummy. Go crazy - Fresh baked bread.

Dont go crazy - Rice/Salad Corn bread!!!!!!!

Sour cream, shredded cheddar cheese, sliced green onions, sliced pickled jalepenos!!!!

Enjoy your dinner!! Chili is hearty enough that I don't have a "side" with it. I have sour cream, shredded cheese and crackers to go with the chili. My mom used to fix a lentil chili (using lentils instead of beans) and she always had celery with it, yummy! Peanut butter and jelly sandwichs for dipping. Have some chips on the side/bread. cornbread...mmmm good Really, nothing.

If you want to serve saltine crackers, or oyster crackers, or cornbread with it, that's fine.

As condiments you can offer hot sauce, sour cream, chopped fresh onion, or grated jack, cojack, or colby cheese.

Nothing else is necessary...chili has all the food groups represented....carbs protein fat, veggies, beans, meat. Serve a nice refreshing fruit drink, and you'll be fine. Cornbread.

Green Chile Cornbread
No doubt about it, this double-corn bread will become a family favorite. Simply add a bowl of soup for an easy meal.

Start to Finish:35 min
Makes:16 servings
1 cup Original Bisquick? mix
1 cup cornmeal
2 tablespoons sugar, if desired
1/2 teaspoon salt
1 cup milk
1/4 cup vegetable oil
2 eggs
1 package (4 ounces) shredded sharp Cheddar cheese (1 cup)
2/3 cup Green Giant? frozen whole kernel corn, thawed and drained
2 tablespoons Old El Paso? diced green chiles


1. Heat oven to 400°F. Spray bottom of 9-inch square pan with cooking spray or grease with shortening.
2. Stir Bisquick mix, cornmeal, sugar, salt, milk, oil and eggs in medium bowl just until moistened. Gently stir in remaining ingredients. Pour into pan.
3. Bake 28 to 32 minutes or until light brown. Serve warm Something as simple as a nice salad. Sometimes I make a cucumber salad. Nothing fancy.. just thinly sliced cucumbers, celery, some nice sharp cheese cut up in sm. pieces, thinly sliced red onioin, oregano, cider vinegar & oil. Chili is pretty highly seasoned and spicy, so you want something cold and light. I will be anxious to see the other answers you get for this, because I have been trying to plan a chili supper for my grown son's birthday and wanted to include his girlfriend's family and needed some ideas myself.

So far, I knew I was planning to have sort of a "chili bar" buffet, with 2 pots of chili, one mild and one more spicy, and beans to add if you prefer. I was also going to have either corn chips or tortilla chips and cheese so guests could turn it into "chili pie", and probably other toppings/add-ins like salsa, sour cream and guacamole. You could also have salad veggies for a kind of southwestern chili layered salad.
I usually make corn bread or corn muffins to go with chili, but if I'm in a hurry, we just have saltine crackers. I'm one of those people who likes to crumble the crackers up into the chili!
I have also served chili over rice.
Rachael Ray made a chili dish on her show the other day, but it was almost more like a spaghetti sauce with peppers cooked in it and served in a pasta casserole. She put it with a weird bacon/chickpea/green salad that looked pretty on TV but I'm not sure my family would eat it. I think I found the info on this menu on the food network website.
Is is turning cooler yet where you live? I am looking forward to chili on the first cool night but it is still in the 90's here in Texas---oh well, maybe by November....! You ARE chili!!
